5 easy-to-pack lunches for back to school

By Safelite // Aug 3, 2018

We know there's a lot that goes into sending the kids back to school. Shopping for supplies and getting the little ones back into a routine, all while trying to soak up every last minute of summer sun. Packing lunch for you or your family is probably the last thing on your mind, so we've decided to give you a little inspiration. These back-to-school lunches are easy to pack, require minimal cleanup and you don't even need to turn on the oven. It doesn't get much better than that!

Pizza Roll-Ups

Tortilla
Pizza Sauce
Mozzarella Cheese
Pepperoni
Dried Oregano
Cream Cheese

Spread a thin layer of cream cheese on the tortilla, followed by a spoonful of pizza sauce. Add a slice of mozzarella cheese and oregano seasoning to taste. Lay on your favorite pizza topping (we chose pepperoni). Roll up and cut into bite-sized pieces. Serve with pizza sauce on the side for dipping.

Mason Jar Berry Salad

Balsamic Dressing
Spinach (or favorite salad mix)
Blueberries
Strawberries
Chopped Almonds
Feta Cheese

Mason jar salads are perfect because they are completely portable and customizable. Our summer berry salad is great for a light lunch on a hot day. Pour the dressing in bottom of the mason jar. Add spinach and layer on toppings. When it's time to dig in, shake the jar so the ingredients combine and enjoy!
