These back-to-school lunches are easy to pack, require minimal cleanup and you don't even need to turn on the oven. It doesn't get much better than that!
Spread a thin layer of cream cheese on the tortilla, followed by a spoonful of pizza sauce. Add a slice of mozzarella cheese and oregano seasoning to taste. Lay on your favorite pizza topping (we chose pepperoni). Roll up and cut into bite-sized pieces. Serve with pizza sauce on the side for dipping.
Mason Jar Berry Salad
Spinach (or favorite salad mix)
Mason jar salads are perfect because they are completely portable and customizable. Our summer berry salad is great for a light lunch on a hot day. Pour the dressing in bottom of the mason jar. Add spinach and layer on toppings. When it's time to dig in, shake the jar so the ingredients combine and enjoy!
Greek Chick Pea Salad
One can of chickpeas
1 Tbsp finely chopped red onion
Half red bell pepper, diced
Half yellow pepper, diced
1/4 cup kalamata olives, diced
1/4 cup Roma tomato, diced
1/2 cup Greek dressing of choice
This healthy and filling lunch is a great make-ahead option. First, drain the chickpeas and put into a bowl or container. Add chopped ingredients and dressing. Mix well until all ingredients are coated with dressing. Add crumbled feta to top. Refrigerate for 3 hours before serving.
Bento Boxed Lunch
Deli meat of coice
Celery or carrot sticks
This bento boxed lunch is a great way to customize your families lunches for the picky eaters in your family. We filled our bento box with ham and turkey deli meat, cheddar and provolone cheese cut into small squares, a hard-boiled egg, and brioche toast crackers. We added hummus to the bottom of a smaller mason jar along with some celery sticks for an easy afternoon snack.
